The Monday blues. We’ve all had them. I certainly have. Over the weekend, maybe I didn’t do enough of the things I should have – or maybe I did too many things I probably shouldn’t have. But now it’s Monday morning, and it’s time to get going. What to do?
Monday Miracle Toast to the rescue! This vegan treat tastes like pizza and requires only six basic ingredients that you probably already have in the pantry or refrigerator. This recipe is simple enough to make with a hangover (not that I know anything about that!), and it always chases my blues away and charges me up for the day to come. I hope it does the same for you.
Monday Miracle Toast
1/2 tsp olive oil or other vegetable oil
1/2 onion, chopped
2 cloves ginger or garlic finely chopped
1 tomato, chopped
Salt, to taste
2 tbsps pizza sauce/tomato sauce (optional)
Chilli flakes, a sprinkling (optional)
2 slices vegan bread, toasted
- Heat the oil in a saucepan and sweat the onions until they are soft.
- Add the ginger and tomato, mashing them a little.
- Add the salt, pizza sauce and chilli flakes.
- Spread on the toasted bread and serve hot.
Makes 1 serving
Not only will you enjoy the flavours and the smooth texture of the sauce on the crisp toast, you will also have the pleasure of being good to yourself (and animals, of course) while shaking the Monday blues out of your system!
