10-Minute Curry Fajitas

2 medium flour tortillas
1/2 tsp olive oil
1 large red bell pepper, cut into 1/4-inch strips
1/2 medium onion, cut into 1/4-inch strips
1/2 tsp curry powder
1/4 tsp chilli powder
1 Tbsp salsa

  • Fry the tortillas on one side over high heat for 30 seconds and set aside.
  • Heat the oil over high heat in a medium saucepan until hot. Add the bell pepper and onion and fry for 2 minutes, stirring constantly.
  • Season with the curry and chilli powders and cook for 5 minutes over medium heat. When the peppers are tender, divide the mixture between the tortillas. Top with salsa.

Makes 1 to 2 servings
