Apples, bananas and cashews pack flavour into this moist muffin.
2 cups unbleached all-purpose flour
2 tsp baking powder
1/2 tsp ground cinnamon
1/2 cup sugar
1 1/2 cups apple juice
1 medium apple, peeled, cored and chopped
2 ripe bananas, mashed
1/2 cup cashews, chopped
Preheat the oven to 325°F. Lightly oil the muffin pan. Combine the dry ingredients and mix well. Add the apple juice, apple, bananas and cashews and stir well. Fill the muffin cups 2/3 full. Bake for 20 to 25 minutes or until slightly raised and lightly browned.
Makes 10 to 12 muffins
