1 cup sugar
1/4 cup water
2 cups diced watermelon, seeded
1 cup freshly squeezed lemon juice
1 quart club soda
- Bring the sugar and water to a boil over medium heat, stirring occasionally until a syrup develops.
- Using the back of a spoon, press the watermelon through a fine mesh strainer and discard the pulp.
- Combine the watermelon juice, the syrup and the lemon juice in a 2-quart pitcher and chill. Add the club soda just before serving. Serve over ice.
