Spicy Tofu Wraps

1/2 green pepper, diced
4 green onions, diced
1/8 cup diced green or black olives
1 chilli, finely diced
1 Tbsp vegetable oil
1 lb tofu, cut into 1/2-inch cubes
2 Tbsp tamari (or soya sauce)
2–3 cups cooked rice
4 tortillas

  • Sauté the vegetables in the oil in a large frying pan. Toss in the tofu and tamari and cook for approximately 10 minutes. Serve with the rice on the tortillas.
