Black Bean and Corn Salad

2 cups drained black beans
2 cups drained corn
6 Tbsp fresh lime juice (or juice of 1 lime)
5 Tbsp olive oil
1/4 cup minced red onion
1/4 cup minced scallions
1/8 cup minced cilantro
1 1/2 tsp cumin
Salt and pepper, to taste
1/2 cup chopped tomatoes

  • Mix together all the ingredients except for the tomatoes. Cover and chill.
  • Shortly before serving, toss in the tomatoes.

Makes 4 servings
