Upma



A great Indian way to start your day.


2 Tbsp. oil
1 Tbsp. mustard seeds
4-5 green chillies, split
1 tsp. urad dal
1 sprig curry leaves
1 1/2 cup suji (thick rava)
2 Tbsp. sugar
1 Tbsp. salt
2 Tbsp. grated coconut


Heat the oil in a frying pan and add the mustard seeds. When the seeds start sputtering, add the split green chillies, urad dal and curry leaves. To this, add the suji and stir this for 2-3 minutes. Add 2 cups hot water, the sugar and salt and keep stirring. Keep covered and cook on a low flame until all the water evaporates. (Open once or twice and stir to prevent it from sticking.) Garnish with coconut gratings.
