Hint: To save time, instead of mincing and chopping the following vegetables, cube them, then blend in a blender or food processor. 3 cups vegetable or tomato juice 1 medium onion, minced 2 medium tomatoes, diced 1 green bell pepper, minced 1 clove garlic, crushed 1 medium cucumber, diced 2 Tbsp. lemon juice 2 Tbsp. red wine vinegar 1 tsp. dried tarragon 1 tsp. minced fresh basil Pinch of ground cumin Dash of hot sauce 2 Tbsp. olive oil Salt and pepper, to taste Blend all the ingredients and chill for 2 hours. Makes 6 servings |
