Idli

1 cup urad dal
3 cups boiled rice
Salt, to taste
Oil for greasing

  • Wash the rice and urad dal separately and soak them separately for 8 to 10 hours. Then grind the rice and urad dal separately into a very fine paste.
  • Mix the rice and urad dal together, add salt and let the mixture ferment for another 8 to 10 hours. Once the batter rises, it is ready for steaming.
  • Grease the idli cups with oil and fill them 3/4 full with the batter. Steam for 10 minutes.

Makes approximately 30 idlis
