Hearty Hash Browns

1 medium onion, finely chopped
1 clove garlic, crushed
2 Tbsp oil
2 large potatoes, grated
Salt and pepper, to taste

  • Sauté the onion and garlic in the oil until the onions are soft.
  • Add the potatoes to the onion and garlic and cook until tender.
  • Add the salt and pepper, to taste.

Makes 2 to 3 servings
