Gazpacho for Macho Taste Buds

This rich soup is as pleasing to the nose and eyes as it is to the taste buds. It’s also a cinch to prepare.

Hint: To save time, instead of mincing and chopping the following vegetables, cube them and then blend them in a blender or food processor.

3 cups vegetable or tomato juice
1 medium onion, minced
2 medium tomatoes, diced
1 green bell pepper, minced
1 clove garlic, crushed
1 medium cucumber, diced
2 Tbsp lemon juice
2 Tbsp red wine vinegar
1 tsp dried tarragon
1 tsp minced fresh basil
Pinch of ground cumin
Dash of hot sauce
2 Tbsp olive oil
Salt and pepper, to taste

  • Blend all the ingredients and chill for 2 hours.

Makes 6 servings
