Tofu Sour Cream

A rich dollop of this is the perfect topping for bean dishes or soups.

1/2 lb tofu, patted dry
3 Tbsp vegetable oil
1 tsp maple syrup
Juice of 1 lemon
Salt, to taste 

  • Mix together all the ingredients in a blender or food processor until smooth.

Makes 1 cup
