Soya Milk

This delicious, versatile, healthy and humane drink has hundreds of uses. Bake it in breads, add it to sauces or drink it straight out of the glass!

1 cup dried soya beans
Water
15–20 cloves
Salt

  • Inspect the soya beans and wash 3 or 4 times. Soak in 2 to 3 cups of water overnight (or at least 8 to 10 hours). The beans should be soft, swollen and grindable.
  • Again wash and inspect, removing any unswollen beans. Grind in a blender with 2 to 3 cups of water, and then sieve through a very thin cloth, such as a sari or dhoti. Repeat this grinding and sieving process at least 6 times, adding 2 to 3 cups of water each time. In the earlier batches, the fluid will be thick enough to make ice cream, but later batches will be thinner. Use your judgement.
  • Add 15 to 20 cloves and salt to taste. Boil for about 15 minutes for texture, stirring with a large spatula to prevent burning.
  • The milk will stay good for a few days in the refrigerator.
