For the Dressing: 1/4 cup olive oil2 Tbsp wine vinegar1 tsp salt1 tsp basil1/2 tsp black pepper1/4 tsp oregano
For the Salad:1 lb tofu, cut into 1-inch cubes3 fresh tomatoes, cored and cut into wedges3 cucumbers, thinly sliced1/2 large red onion, chopped1/2 cup Greek black olives1 head leaf lettuce, washed and dried
• Mix together the dressing ingredients, pour over the tofu and marinate for at least 1 hour.• Add the tomatoes, cucumbers, onion and olives to the tofu.• Toss and serve on the lettuce.
