40 g (1 1/2 oz) blanched almonds 5 Tbsp brandy 80 g (3 oz) melted chocolate100 g (4 oz) icing sugarCocoa, to taste
• Blend the almonds and brandy with a hand blender until fairly smooth.• Pour in the melted chocolate and combine.• Add the icing sugar until you get a stiff paste.• Roll the truffles into balls and leave to set. Roll in cocoa or dip in chocolate.
Makes 8 to 10 truffles
