New York -- Women's World Cup champion and Olympic Gold medalist Kristine Lilly is a star on the playing field, but knows that victory begins in the kitchen--with what you eat--and has teamed up with PETA to promote delicious, healthful, and fast vegetarian meals that are ideal when speed is the goal.
In the winter edition of PETA's Animal Times magazine, Lilly offers some advice that everyone can take to heart--on or off the playing field: "If you want to stay healthy and energetic ... use your head when deciding what to put on your plate." The feature includes savory recipes that are packed with protein and carbohydrates, from innovative entrées like "Crumbly Loaf with Sauteed Mushrooms" and meaty eggplant "steaks," to variations on tasty classics like "Neatball" Subs and Hearty Veggie Stew.
PETA reminds consumers that the three biggest killers of people in the United States--heart disease, cancer, and stroke--have been conclusively linked to meat consumption. Vegetarianism is the best way to help prevent these diseases as well as to help end appalling cruelty to animals on factory farms and in slaughterhouses.
